Rob’s culinary journey began right out of high school, bussing tables and discovering a passion for hospitality that would define his career. He quickly worked his way through the front of house—serving, bartending, bar management, and eventually overseeing the dinner rush at one of the busiest restaurants in his hometown.
Driven to grow, Rob relocated to Vancouver to join the corporate casual fine dining scene on Robson Street. His leadership earned him positions on multiple opening teams, where he transitioned from front-of-house management into the kitchen brigade. There, he became day coach, leading the senior prep team responsible for setting up high-volume operations for the night shift.
Rob later joined the iconic Hotel Vancouver, working across family dining, fine dining, and banquets. During his Red Seal apprenticeship, he was part of the brigade that cooked for Queen Elizabeth II during her 2002 Golden Jubilee visit—a milestone moment in his early culinary career.
From restaurants, Rob stepped into the world of film catering in Vancouver’s “Hollywood North.” His first production was as a second cook on the Walking Tall remake starring Dwayne “The Rock” Johnson. After moving to Calgary to raise his family, he returned to casual fine dining as a Kitchen Leader before taking on a major new challenge: overseeing culinary operations for 26 wildfire bases throughout Alberta during some of the most intense fire seasons on record, as well as serving as regional chef for oil and gas camps across Alberta and northern BC.
Seeking a return to creative cooking, Rob launched RGG Catering and re-entered the film industry—this time as Chef/Owner. He catered everything from commercials to major motion pictures, working in the extreme heat of the Badlands and the deep winter storms of Fortress Mountain, even delivering fresh meals mid-mountain by snowcat. Streetside Smokehouse was created to bring true, scratch-made smoked barbecue to events across Alberta. The original build (v1) met an early and unfortunate end due to a faulty smoker, but Rob rebuilt and returned stronger with Streetside Smokehouse 2.0—a fully winterized, professionally outfitted mobile kitchen designed to operate year-round in Alberta’s toughest conditions.
Equipped with commercial-grade systems, efficient service windows, and a custom smoker setup, the truck allows Rob and his team to serve fresh, high-quality barbecue onsite, no matter the venue or weather. Every rub, sauce, and side is made in house from scratch, and every menu item is crafted with care, technique, and a deep respect for the craft of barbecue.
